How many dishes for how many people?

For two people you can order whatever you fancy. From four upwards, ordering by instinct almost always ends one of two ways: too little, so you order again mid-meal and sit waiting, or too much, so the last tray goes cold untouched.

The formula below works off head count and holds at most BBQ places:

  • Main dishes (grill, seafood): portions equal to about half the head count.
  • Small bites: one portion per three people.
  • Filling dishes (fried rice, fried noodles): one portion per five people.
  • Hotpot: one pot shared between 4–6 people.

That is the level where everyone eats their fill with a little left over. An all-male group, or a table sitting longer than three hours, should add one more main.

The three layers of a drinking spread

A spread usually fails on sequence, not on the food. A spread that runs smoothly has three layers, and each has a job:

  • Small bites — eaten the moment you sit down. Fried silken tofu with pork floss, chili salt grilled chicken feet, fish sauce fried chicken cartilage, sausages. This is the layer people forget most often, and without it the first fifteen minutes are spent staring at the grill waiting for the first piece of meat.
  • Mains — the spine of the meal. Grilled dishes and seafood, ordered in waves rather than all at once.
  • Filling dishes — the close. Fried rice or noodles ordered near the end, once you know whether anyone is still hungry. Order it early and it goes cold; order it and leave it and you have wasted it.

The hotpot sits outside these three: it is not there to fill you up but to keep the table warm and the meal moving, which matters in Da Lat once the temperature drops below 18°C after 20:00.

Picking grilled dishes: slab, roll or skewer

The three styles differ in how fast they cook and how easily they divide, not just in price. A group that orders only one style either waits or competes.

  • Slab — Kobe beef 209,000 VND, Okachi beef 229,000 VND. A large piece grilled whole then cut at the table. Slowest to cook but the easiest to share evenly, and the only dish the whole table looks at when it arrives. Good as the opener.
  • Rolls — beef belly enoki rolls 137,000 VND. Thin, quick to cook, ready to eat while the slab is still going.
  • Skewers and cubes — grilled beef skewers 185,000 VND, grilled beef cubes 170,000 VND. Easiest to divide per head because you can count them, which suits a big group at a long table.

A spread that runs well usually has at least two of the three: a slab to open with, and something quick to eat while it cooks.

Is a hotpot worth it if you already have the grill?

In Da Lat, yes — and the reason is the weather, not the flavour. After 20:00 the outdoor temperature usually drops below 18°C. A table with only a grill has a cold pause between rounds of meat, while a simmering pot keeps both the warmth and the rhythm.

All three pots on the Xom Leo menu sit at 300,000–320,000 VND and serve 4–6 people:

  • É leaf chicken hotpot, 300,000 VND — the highland flavour, the mildest of the three, good when someone at the table cannot eat seafood.
  • Seafood hotpot, 320,000 VND — the boldest, and the usual choice for a table drinking beer.
  • Sturgeon hotpot, 320,000 VND — sturgeon from Don Duong, few bones, easier for children and older guests.

Groups of eight or more should order two pots placed at either end of the long table, rather than one in the middle that half the table cannot reach.

Drinks: beer, plum wine or hot tea

Drinks are the line people forget when estimating, and then the biggest surprise when the bill is split. Three common routes:

  • Beer — 19,000 to 28,000 VND a bottle. Saigon Lager is cheapest at 19,000 VND, Tiger Silver 28,000 VND. Quick maths: six people drinking moderately go through 12–18 bottles, so roughly 250,000–500,000 VND for the table.
  • Plum wine and soju — 110,000 to 170,000 VND a bottle. One bottle serves 4–6, so per head it usually works out cheaper than beer, and it suits the cold better.
  • Hot tea — 37,000 to 39,000 VND a serving. Always worth a few for the driver and anyone not drinking. Ginger, red date and honey tea is the usual pick once the mist comes down.

The tidiest way to split a group bill: keep the drinkers’ drinks separate and divide the food evenly. Agree that when you order, not at the till.

Four common mistakes when ordering for a group

  • Ordering everything in one go. The kitchen sends it all at once and the fourth tray is cold before its turn. Order in two waves, the second while the second tray is on the grill.
  • Skipping the small bites. That leaves the first fifteen minutes with nothing to eat — exactly when everyone has just sat down and is hungriest.
  • Not asking how many grills fit on the table. A long table with a single grill means half the table waits, however well you ordered. At Xom Leo each single table has its own grill, so joining tables gets you that many; elsewhere, ask before you book.
  • Leaving drinks out of the estimate. For a group drinking beer this is usually 15–20% of the bill.

Drinking late in Da Lat: working backwards from closing time

Da Lat is not a late-night drinking city. Most BBQ places close between 22:00 and 23:00, so a group that wants an unhurried evening has to count backwards from closing, not forwards from arrival.

  • A full three-layer spread for six people runs 2.5–3 hours from ordering to asking for the bill.
  • A larger group adds at least 45–60 minutes, because ordering, grilling and talking all take longer.
  • Xom Leo opens 15:00–23:00 every day, so six people should be seated before 20:00 and ten people before 19:30.

Arriving early buys one more thing at no cost: the restaurant sits beside the Trai Mat railway, and the two night trains leave Da Lat Station at 18:15 and 20:20, passing the tables at roughly 18:40–19:00 and 20:45–21:10. The trains only run with enough passengers.

What does a drinking spread in Da Lat cost per person?
